Quinoa Instant Porridge
Quinoa is an ancient grain, high in protein and gluten free.
Add spirulina or acai powder for an extra boost.
Makes 4-6 servings
Ingredients:
120g quinoa flakes
8 tbsp coconut oil
85g ground almonds
50g gogi berries
30g dessicated coconut
2 teaspoon cinnamon powder
3 tbsp chia seeds
3 tbsp flaxseeds(whole or milled)
2-4 tbsp maple syrup(optional)
Toppings:
Grated apple, seeds, nuts, cocoa nibs, if not using maple syrup add drizzle of raw honey, coconut yoghurt or natural yoghurt.
Method:
1.Spread the quinoa flakes, no more than 1/2 cm thick on a lined baking tray.
Bake at 180 degrees or gas mark 6 for 10 minutes.
This pre cooking is what makes the porridge instant later.
2. Remove from the oven and pour into a bowl with the coconut oil. Add the rest of the ingredients and mix together. Allow to cool, transfer to a lidded jar and store some where cool.
In The Morning:
1. Spoon 4-6 tablespoons of the mix into a bowl. Pour over half cup of boiling water, cover and leave for 5 minutes. Add more water to make it thinner if desired.
2.Add tops if you want.
